Whisk together oil, garlic and oregano in a shallow large baking dish. Add the chops and turn to coat. Cover and marinate for 1 to 1 1/2 hours in the refrigerator.

Remove the chops from the refrigerator 20 minutes before grilling.

Preheat grill to high heat.

Cook the chops to your desired degree of doneness, 5 to 6 minutes per side for medium. Remove from the grill and let rest a few minutes before serving. Season to taste with lemon, salt and pepper to serve.
