Refried beans, salsa, green onions, and spicy ranch dressing add a little something different to the familiar family pizza. I like to use Pillsbury(R) Refrigerated Pizza Crust, Hint of Lime(R) tortilla chips, and Desert Pepper Trading Co.(R) 2 Olive Roasted Garlic Salsa - it is thick with extras and has a nice heat to it. Depending on how thick your salsa is, you might want to add some water as well.
Pre-heat oven to 400 degrees F (190 degrees C). Grease a cookie sheet or pizza pan and roll out pizza crust and set aside. Option: sprinkle the crust with garlic powder and/or Italian seasoning.
2.
Brown meat in a large skillet and drain. Add salsa and season mix Let this cook for a few minutes before mix in the refried beans. Let this cook down a little and thicken up. Now spread mixture over the crust.
3.
Bake it for 8 minutes. It will look like there is way too much mix, but it will settle down some on this precook.
4.
Remove from the oven and top with 2/3 of the cheese and the crushed tortilla chips. Now add the rest of cheese, and drizzle the dressing over the top. Sprinkle the chopped onions over the top and place in the oven for another 11 minutes.
5.
Remember to let it sit for a minute or two before cutting it into slices.
The topping was very tasty -- I followed the recipe exactly as written except I couldn't find the brand of salsa recommended. I used thick Pace which was very good. The one thing I'd do differently next time is use a pre-made pizza crust, like Boboli. The Pillsbury refrigerated didn't seem to hold up too well, but I'll admit I'm not great at rolling out pizza dough so I'll fess up to that part being my fault. :0)
