Mix beef, soup mix, bread crumbs, eggs, and chili sauce with hands. Divide beef mixture into four equal portions. Divide portions in half.

Shape four oval 'canoe-like' loaves, with centers slightly dished out, in the bottom of a 9x13 baking pan. Place approx. 1 ounce of cheese in the dished out centers of each loaf. Shape other four portions to fit on top of cheese. Place other portions on top of cheese, crimp edges together, and shape into mini loaves.

Wrap two slices bacon around outside of each loaf. Spread thin layer of chili sauce on top of each loaf.

Bake in the preheated oven until juices no longer run pink, 45-50 minutes.
The serving size was bigger than I expected, so one mini-loaf could actually serve two people - or one hungry man! The bacon makes the outside of the loaf taste good. Overall, a fun presentation.
very easy to make and I love the concept of a personal meatloaf especially when its wrapped in bacon! I subbed shredded cheese for the velveta and I didnt have chilli sauce, but it still turned out great. this is one of those recipes that you DONT need a recipe for, after all it is meatloaf, just throw stuff in there till it taste good!
