Irish Sodabread

A thick, heavy sodabread.

Ingredients

1/2 pound plain white flour
1/2 pound wholewheat flour
Pinch of salt
Pinch of Sugar
1 level teaspoon baking soda
2 tablespoons butter
1 egg
1 cup buttermilk, or as needed

Preparation method

1. Preheat oven to 425 degrees F (220 degrees C).
2. Sieve both the white flour and brown flour into a mixing bowl. Add the salt, sugar, and sieved baking soda. Mix with a spoon until evenly mixed.
3. Add butter gradually, putting in small pieces bit by bit and working with hands until butter is reduced to tiny pieces, covered with flour.
4. Mix the egg in a measuring cup until fully mixed, then add milk to bring the amount up to 1 1/4 cups. Mix again until fully mixed.
5. Make a well-like hole in the center of the dry ingredients, and pour in milk and egg. Don't pour in all at once. Pour in about 1 cup, adding more if necessary to make a slightly sticky but manageable dough.
6. Mix by hand until the dough is uniformly smooth and wet, then turn onto a lightly floured work surface.
7. Shape into a circle, about 6/7 inches across and 1 inch high.
8. Place on floured baking tray, and cut a 1/4-inch-deep cross on top.
9. Bake at 425 degrees F for 20 minutes, reduce heat to 400 degrees F and bake for 20 more minutes.
10. Bread is done if the bottom sounds hollow when tapped. If you like a soft crust, wrap immediately with a damp cloth.
