This Soda Bread has been a favorite in my mother's kitchen for as long as I've been alive. Just mix the ingredients and place in a regular size loaf pan as their is no need to let it rise. It's cakelike texture makes it a wonderful treat right out of the oven or even better in the toaster with butter and jam the next day. I hope you all enjoy it.

Ingredients

3 C Flour
1/2 C Sugar
1 Tbs Baking Powder
1/4 tsp Salt
1 1/4 C Whole Milk
1 large egg
2 Tbs Melted Butter
1 C Raisins
1 Tbl Caraway Seeds (optional)

Preparation method

1. Preheat oven to 350 degrees F (175 degrees C). Mix and sift dry ingredients (flour, sugar, baking powder and salt) in a large bowl.
2. In a separate bowl combine milk and egg and blend until mixed. Combine wet ingredients with dry ingredients and add melted butter, raisins and caraway seeds(if desired) and hand mix with spoon until all ingredients are combined ( do not overmix). place mixture in a regular size loaf pan.
3. Bake in center rack of oven for 1 hour., or until loaf top is golden brown. Place on cooling rack to allow proper cooling of loaf or slice while still warm and enjoy with some butter, jam and tea. Enjoy!
