Preheat oven to 350 degrees F.

Season pork chops with salt, pepper, 1 tablespoon cilantro and paprika.

Heat an oven-safe skillet over medium with the oil in it. After a minute, add the pork and sear each side for 2 minutes.

Put skillet in oven and cook for 15 more minutes, until pork is cooked through and no longer pink in the middle.

Meanwhile, make the sauce. Start by browning the sausage in the skillet until no longer pink in the middle, about 10 minutes.

In food processor combine tomatoes, remaining cilantro, onion, garlic salt and pepper. Blend until everything is no longer chunky.

Add mixture to cooked sausage and cook over medium-low heat for about 5 minutes, or until pork chops are cooked.
8.
Serve by spooning sausage sauce over pork chops.
