1.
Skewer the first four ingredients in this order: tomato, shrimp, olive, mozzarella, olive, shrimp, and tomato. Place in a 9x13-inch baking dish.

Whisk together vinegar, oil and garlic in small bowl. Pour over top of skewered ingredients, tossing gently to make sure all skewers are covered with marinade.

Refrigerate from 1 to 6 hours, tossing occasionally.

Arrange in a pinwheel design on a large round plate. Serve.
