A Lil Bit Better 4 U Monster Cookies

The first time I had these cookies was for my aunt's wedding and I could not stop eating them. They have the perfect balance of peanut butter, chocolate, nuts, oats, and coconut. I hope everyone enjoys them as much as I do!

Ingredients

4 cups Gold Medal(R) Unbleached All Purpose Flour
2 teaspoons baking powder
2 teaspoons baking soda
1 cup (2 sticks) margarine or butter
1 cup Crisco(R) Butter Flavor All Vegetable Sticks
1 cup Jif(R) Peanut Butter
2 cups Splenda(R) Sugar Blend For Baking
2 cups Splenda(R) Brown Sugar Blend(packed)
Egg Beaters(R) Original (equivalent to 4 eggs)
2 tablespoons vanilla extract
2 cups Regular Quaker(R) Oats
2 cups Mounds(R) Coconut
2 cups Diamond(R) Chopped Walnuts or Pecans
2 cups M&M's(R) candies
Crisco(R) Butter Flavor No Stick Cooking Spray

Preparation method

1. Preheat oven to 350 degrees F (175 degrees C). Sift together flour, baking powder, and baking soda.
2. In mixer, cream together: margarine/butter, Crisco Sticks, Jif Peanut Butter and both Splenda Sugar Blends. Add Egg Beaters and vanilla extract. Add flour mixture.
3. Stir in Quaker Oats, Mounds Coconut, Diamond Nuts, + M&M's.
4. Lightly grease cookie sheets with Crisco Cooking Spray. Use a tablespoon or cookie scoop to drop dough onto cookie sheets.
5. Bake for 10-12 minutes until lightly browned. Remove cookies and let cool. Enjoy!
