Combine chicken, soy sauce, garlic, ginger, fish sauce, and half of the sweet chili sauce in a plastic resealable bag. Marinate in fridge for at least 2 hours.

To make the dressing, combine sour cream, honey, mustard and the remaining sweet chili sauce in a bowl. Stir and chill.

Heat grill to Medium and lightly oil grate.

Grill chicken about 3 minutes on each side, until it has a lovely caramelized color.

Serve chicken over lettuce and drizzle with creamy dressing. Serve.
