1.
Eat 1.5 slices of bacon while dicing the remaining 1.5 slices into small pieces.

Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor.

Pulse until finely chopped.

Add tomatoes and bacon, and pulse A FEW TIMES until the tomatoes are coarsely chopped - be careful not to over chop.

Place in a plastic bowl/container with a tight fitting lid.

In another bowl whip together the oil, vinegar, lime juice, salt and bacon salt.
7.
Pour over tomato mixture. Stir well.
8.
Refrigerate for at least one hour.
