Ingredients

1 egg
1 large sweet onion, chopped
1 1/2 pounds ground beef
1/4 cup mayonnaise
6 slices cooked, crumbled bacon
1 cup firm white bread crumbs
1 cup shredded Cheddar cheese
2 tablespoons sweet pickle relish
2 teaspoons dry mustard powder
1/2 teaspoon seasoned salt
1/2 teaspoon fresh ground black pepper
1/4 cup ketchup

Preheat oven to 350 degrees F.

Mix the egg and onion together in a mixing bowl to break up the egg. Work in the ground beef, mayonnaise, bacon, bread crumbs, cheese, relish, salt and pepper. Mix with your hands until evenly combined, then pack into a loaf pan.
3.
Spread the top of the meatloaf with ketchup. Bake in the preheated oven until a meat thermometer inserted into the center registers at least 160 degrees F, about 1 hour.

I used dill relish and topped the meatloaf with bacon strips and homemade bbq sauce.

used bbq sauce cause run out of ketchup and topped with smokey bacon. lush
