Preheat oven to 350 F.

Cook the bacon in a 10-inch cast iron skillet over medium heat until the fat has rendered out and the bacon is cooked, but not quite crisp. Remove the bacon pieces with a slotted spoon and let cool. Place the skillet into the oven with the remaining grease, and let it preheat.

Whisk the flour, sugars, salt, and cayenne pepper together in a mixing bowl until evenly blended. Add the beer, bacon, and cheese, and mix until no large dry lumps remain (some small lumps are ok).

Remove the cast iron pan from the oven, and tilt this way and that to redistribute the fat. Pour the batter into the hot skillet, then return it to the oven.

Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
Tips
Try using 1/2-inch cubes of cheese instead of shredded for pockets of cheese in the finished bread. Cheddar, provolone, and Swiss are good too.
