Satay Beef Noodle Soup

Ingredients

• 10 ounces rump steak, fat trimmed and thinly sliced
• 1 teaspoon sesame oil
• 1 teaspoon minced garlic
• 1/2 teaspoon baking soda
• 1 tablespoon rice bran oil
• 4 ounces rice noodles
• 2 tablespoons red curry paste
• 1 teaspoon minced garlic
• 1/2 teaspoon minced ginger
• 1 teaspoon minced coriander
• 1 tablespoon raw sugar
• 2 tablespoons crunchy peanut butter
• 1/2 teaspoon fish sauce
• 2 teaspoons lime juice
• 1 (15 ounce) can coconut milk
• 7/8 cup water
• 1 cup beef stock
• 3 spring onions, thinly sliced on an angle
• 2 cups Chinese fresh stir fry mixed vegetables
• 1 cup bean sprouts
• 1 tablespoon shredded fresh mint leaves
• 2 tablespoons roughly chopped fresh basil leaves
• 1 small red chili, thinly julienned for garnish
• Eatra rice bran oil for frying
