This is an old family recipe of mine, you will not believe how good this is! Serve with mashed potatoes and gravy. The leftovers are great for sandwiches.
created an account just to review this recipe. it was excellent! made 2 for a large gathering and had leftovers for sandwiches! used a packet for the gravy as a time-saver. the bacon over the top is what really makes the flavor pop!
Thanks for this recipe, Abillus - It is a really good basic meatloaf. It is easy to put together, not over-spiced and the cheese bits add a nice touch of creaminess. The loaf cooks evenly and is nice and moist. It reached an internal temperature of 142° in the hour it was in the oven and bumped 150° after resting for 15 minutes (I highly recommend resting any meatloaf for 15-30 minutes after getting it out of the oven). Now, if only I could make a nice brown gravy such as is in you picture!
