Preheat oven to 375 degrees F.

Scrub the potatoes of all dirt. Chop length-wise into chunky slices. Mix all spices in a large bowl, add the potatoes and all other ingredients and give a good mix round so they are evenly coated.

Spread onto a baking tray and level them out so they are not all on top of each other, pop into the oven for 30 to 40 minutes or until they are all nice and crispy.

These are much healthier for you than getting take-away wedges as we only use a sprinkle of olive oil, and a take-away place will deep fry!!!
