Marinated and grilled spicy skirt steak with fried potatoes, onions and melted pepper jack cheese on a roll. Similar to a Philly Cheesesteak Sandwich. Serve with your choice of condiments.

Whisk together all but 3 tablespoons oil, lemon juice, jalapeno, garlic, cilantro, and steak seasoning. Place steak in a dish and cover with marinade. Let sit at room temperature for 1 hour, turning occasionally.

Melt 1 tablespoon butter in a heavy skillet along with remaining oil (medium heat) Add potatoes and fry until crispy on the outside and tender on the inside. While potatoes are frying, turn them occasionally.

In a separate skillet, melt remaining butter and saute onions slowly until soft and caramelized (20 minutes).

Heat a grill pan (skillet w/ ridges) to high. Remove meat from marinade (discard liquid) and sear steak on both sides for 3-4 minutes per side. Remove to a cutting board and allow to rest for 5 minutes before slicing into thin strips (cross grain).

Heat oven to 400 degrees Fahrenheit.

To assemble sandwiches:
Divide potatoes and place on the bottom of each roll followed by the steak. Top with caramelized onions, slices of cheese, and the top of the roll. Place on a baking sheet and place in oven for 2 minutes or just until the cheese has melted.
