1 1/2 to 2 poundsflat iron steak (or top round)
1 1/2 tablespoonsseasoned salt (or a salty BBQ rub)
1 cupflour
1 teaspoonblack pepper
1/4 cupbuttermilk
1/4 cupdark beer
1egg, beaten
1 tablespoonhot sauce (I use Frank's® Red Hot® or Crystal)
Years ago I knew an old boy up in Yellow Pine that made his with Bear steaks. I never got to try them, but I know for a fact that fresh Cougar makes REALLY good finger steaks.
