Place the ham shank into slow cooker and add enough of the water to create 1/2 an inch of water in a 7 quart slow cooker. Cover and turn on to Low.
2.
Rinse beans, then in a large pot, combine beans with rest of water, ham hock, onions, cilantro, peppers, & garlic, and bring to boil. Boil for 10 minutes.
3.
Transfer bean mixture to heated slow cooker.
4.
Lightly coat diced pork tenderloin with olive oil, season with granulated garlic and brown in a large skillet over medium-high heat.
5.
Add pork tenderloin and diced ham steak to slow cooker.
6.
Cook on Low for 8 to 10 hours. When cooking time is complete, using tongs, remove the fat and bone from both the ham hock and ham shank. Take care to remove all bones (the bones will have cooked off and separated).
Serving suggestion
Serve as a main dish (with tortillas) or as a side dish. Great side with Tri-tip.
Tip
NOTE: When adding salt or any additional seasoning, be aware that the ingredients provide lots of flavor and seasoning.
This is the best bean recipe I have ever had. All of the flavors of the different peppers really come through, and the ham and tenderloin just melt in your mouth. This is sure to become a family favorite! It is a must try recipe!!!
