ABM Ginger-Bread

A rich, dark bread with that heavenly scent of ginger. Luscious with cream cheese and/or lemon curd. Great toasted too.

Ingredients

1 1/4 cups hot coffee
1/4 cup raisins
1/3 cup molasses
2 tablespoons brown sugar, packed
1 large egg, beaten
2 1/4 teaspoons active dry yeast
3 1/3 cups flour
2 tablespoons cocoa powder
1 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon lemon zest, grated

Preparation method

1. Make hot coffee. Soak raisins in coffee for 15 minutes. Drain raisins reserving 1 cup of coffee.
2. Place coffee in bread pan. Add molasses, sugar and egg. When coffee mixture is below 120 degrees F. add the yeast and allow to work for 10 minutes.
3. Add flour, cocoa powder, salt and seasonings.
4. Add raisins and lemon zest at fruit indicator signal or add with flour.
