Preheat oven to 450 degrees F and move rack to highest position.

In a medium sized sauté pan melt butter and add sliced maui onions. Raise heat to high and add Maker’s Mark. Mix onions until most of the liquid has evaporated. Lower heat to low and allow onions to cook/caramelize (turn a rich brown color.) This will take about 30 minutes. Remove from heat and cool.

Roll out pizza dough to 1/8-inch thickness.

Evenly cover with BBQ sauce.

Sprinkle smoked mozzarella and onions.

Bake for 15-18 minutes or until the dough is crispy and the cheese is bubbling. Remove from oven. Sprinkle with fresh cilantro and serve.
