Combine freshly ground sirloin, ground pork, shallots, BBQ rub, and cracked pepper in a mixer until well combined, about 3 minutes. Form into four huge patties.

Preheat a charcoal grill for medium-high heat.

Throw the cherry chips onto the hot coals and place the burgers on the grill. Cover the grill and cook 4 minutes. Turn the burgers over and cook another 4 minutes with the lid closed. Don't leave the lid open, or you'll let the smoke escape!

Cook over charcoal on medium high heat for 4 minutes and turn. Cook for another 4 minutes. Do not open lid during cooking except to turn. Toast the buns on the grill for the best burgers.
