Ceviche

Lemon-lime marinated fish. Serve with tortilla chips and margaritas.

Ingredients

2 pounds red snapper - cut into small mouth size pieces
1 onion - minced, not to fine
1 bunch cilantro - minced, not to fine
1 or 2 - jalapeno peppers, fresh or pickled, minced fine
1 teaspoon - oregano
garlic salt - to taste
6-8 lemons, limes or a combination both

Preparation method

1. Put all ingredients into a non-reactive bowl, less lemon-limes. Mix ingredients.
2. Add lemon-limes until juice begins to form puddles on top of ingredients. Stir, taste juice for saltiness.
3. Refrigerate a minimum of 4-hours, best overnight.
