Alligator Chili

Another of my Super Bowl creations that was a huge hit with all who tried it.

Ingredients

2 pounds alligator - ground
1 Vidalia onion - diced
1 green pepper - diced
1 tablespoon olive oil
1 (35 ounce) can crushed tomatoes
1 (32 ounce) bottle V8(R) juice
1 (15 ounce) can black beans
1 (15 ounce) can kidney beans
1 tablespoon chili powder - heaping
1 tablespoon chipotle in adobo
1 teaspoon cumin
1 teaspoon cinnamon
1 teaspoon celery salt
1/2 teaspoon ginger
salt & pepper to taste
hot sauce

Preparation method

1. Grind or chop the alligator in a food processor.
2. Saute the onion & green pepper in a large pot with the olive oil until onion is translucent. Add alligator and brown slightly.
3. Combine crushed tomatoes, V8, black beans, kidney beans & spices and let simmer slightly covered for 2 to 3 hours. May add a little water from time to time as you see fit. Serve with a dash or two of hot sauce if you so desire.
