Preheat oven to 375 degrees F.

Fill a large pot with salted water, and bring to boil over medium heat. Pierce duck breast several times, then gently lower into water. Boil for 10 minutes, then drain and pat dry. (Careful, guy, don't burn yourself.)

Season the duck with salt and pepper, according to taste, including the cavity. Fill a roasting pan with 1 cup water, and put a rack on top of it. Put the duck on the rack. Bake for 30 minutes.

After you put the duck in the oven, make the glaze: whisk together the orange juice and soy sauce in a small mixing bowl. After the duck has roasted for 30 minutes, brush the duck with glaze and return to the oven. Repeat three more times, until the duck has roasted for 30 more minutes (a total of 1 hour).

Remove duck from oven and tent with foil. Let stand for 1- minutes to allow juices to settle, then serve.
