Grab a large soup pot or Dutch oven. Put it over medium heat, pour in the oil, and heat it up. Add the onion, bell pepper, jalapeno, and garlic, and saute in hot oil until just starting to soften, about 6 minutes. Then add the rest of the ingredients, except for the chicken.

Bring to a boil, then simmer for 15 minutes. Add chicken, then simmer for another 5 minutes. Serve with cheese shredded over the top, if you've got it.
