Cook rice with water in a covered saucepan over low heat until tender, about 15 minutes.

Combine all veggies in a bowl; set aside.

Mix eggs with 1/2 ounce canola oil and the sesame oil. Add other 1/2 oz canola oil to wok, get really hot. Add egg mixture to wok, then lower heat to simmer; cook until they are like runny eggs. Add rice gradually, unclumping rice as you scramble. Add cooked chicken, scramble well. Then add veggies and scramble well, keep veggies crispy.
