This creamy chicken casserole uses sour cream and cream of chicken soup with a buttery Ritz(R) cracker topping. People will insist on having the recipe.
Boil chicken until cooked thoroughly, about 10 minutes. Dice the chicken or shred in a food processor. Place prepared chicken in the bottom of a 9x13x2-inch casserole sprayed with nonstick cooking spray.

Combine sour cream and soup; pour over chicken. Sprinkle with salt and pepper. Cover top with crushed Ritz crackers. Drizzle with melted butter.

Bake in the preheated oven until bubbly, about 45 minutes.
Good texture. It's the crackers on top that makes this good. I used 3 really large chicken breats and shredded them. 4 would have been too much meat. Family said this was a "keeper!" Moderate rating for ease only because of the extra step of shredding the meat.
