Finely slice the chicken breasts into small strips to fry. In a medium pot, bring water to boil.

In a large wok, fry the chicken strips in the vegetable oil on med-high, until cooked through. (~5-7 minutes)

Lower the heat to medium. Add the chopped peppers (red & green), carrots, and corn. Cook for 2-3 minutes.

At this time add the hoisin sauce and chili paste to the stir fry.

Now cut the somen noodles into 2-3 inch pieces and add to the boiling water. Lower the water to low and cook for 2-3 minutes until tender. Drain the noodles in a colander.

Serve the noodles on a plate or bowl and spoon the finished stir-fry on the top.
