Ingredients
Serves: 2
3 tablespoons olive oil
1 broccoli head, finely chopped
1 potato, finely chopped
1 small onion, finely chopped
3 tablespoons chili powder
2 tablespoons garlic powder
1 tablespoon Kosher salt
1 boneless, skinless chicken breast, cut in 1 inch cubes
Heat olive oil in a frying pan. Cook broccoli, potato, and onion in oil until tender, about 5 minutes. Add chili powder, garlic, salt, and chicken to the vegetables. Saute until chicken is cooked through, stirring constantly, 10 to 15 minutes. Transfer to a food chopper, chop entire mixture until fine.
