Mexican Meatloaf

I was eating some fajitas and rice one day and wondered "how about I combine this somehow?" This is the result. Green salad and corn bread are very good complementary dishes.

Ingredients
Serves : 4
1 tablespoon extra virgin olive oil
1 cup chopped onion
1 tablespoon grated garlic
1 1/2 lean hamburger
3/4 cup uncooked quick rice
1 egg, beaten
1 1/2 teaspoon ground cumin
1 tablespoon ancho chile powder
2 seeded guajillo peppers, chopped fine
1 tablespoon dried cilantro
1 teaspoon salt
1 1/2 cup salsa

Preheat oven to 350 degrees F (175 degrees C).

Heat the olive oil in a skillet over medium heat. Cook the onion and garlic until onion begins to soften, about 3 minutes.
3.
Combine the hamburger, rice, egg, cumin, ancho chile powder, guajillo peppers, cilantro, and salt in a large bowl, mixing thoroughly.
4.
Pack into a meatloaf pan and bake in the preheated oven for 45 minutes.
5.
Top with salsa and cook until the sauce has dried, about 10 to 15 minutes.
