Slow Cooker Irish Lamb Stew

A simple, traditional lamb stew with plenty of flavor from fresh herbs.

Ingredients
Serves: 4
- 2 pounds potatoes, peeled and thickly sliced
- 1 pound boneless, lean lamb-leg steaks, each steak cut into 4 pieces
- 1 onion, sliced
- 1 pound carrots, thickly sliced
- 2 tablespoons chopped parsley
- 1 teaspoon fresh thyme leaves
- 1 tablespoon snipped fresh chives
- 2 cups hot vegetable stock
Preparation method
Prep: 10 mins | Cook: 8 hours1.
Layer the potatoes, meat, onion, and carrots in 6-quart slow cooker, sprinkling herbs and pepper throughout. Pour stock into the slow cooker, then cover and cook on LOW for 8 hours.
Alternate Method
Cook the stew for about 4 hours on HIGH.
