Big flavored chili, because chirizo itself comes flavored. Often found in breakfast scrambles...would you dare have this for breakfast? Inspired by Austin N's "Quick and Easy Chorizo Chili."
Heat a large skillet over medium-high heat. Add the yellow onion, chipotles, and chorizo and cook until chorizo is cooked, about 5 minutes. Drain off fat and transfer to 6-quart slow cooker.

Add remaining ingredients, stir well to combine, and close. Cover and cook on LOW for 8 hours.
