Reuben Baked Potatoes

Out of bread? Turn your reuben sandwich fixin's into a hearty, creamy topping for baked potatoes. Super for your St. Paddy's Day leftovers, if you have any.

Ingredients

Serves: 4

4 Russet potatoes
1 pound corned beef, sliced thin
1 cup Thousand Island dressing
4 slices Swiss cheese

Preparation method

Prep: 10 mins | Cook: 1 hour

Preheat oven to 400 degrees F.

Pierce the potatoes a few times with a fork. Place on baking sheet and bake for 1 hour, or until you can easily slide a knife through the potatoes.

Place corned beef in a skillet over medium heat and warm up, then toss with Thousand Island dressing.

Split potatoes open and top each with corned beef mixture and 1 slice Swiss cheese. Return to oven for 3 minutes to melt cheese.

Cook potato faster in microwave

In a hurry? Cook the potatoes in the microwave. Pierce with a fork as above, then put in microwave on a paper towel. Microwave on high for 15 minutes (only 8-10 if you are doing just 1 potato), or until you can easily slide a knife through the potato.
