Place cider, maple syrup, garlic, canola oil, soy sauce, cinnamon, star anise, and crushed red pepper flakes. Remove 1 1/2 cups and place in a separate plastic bag. Add meats, seal, turn to coat, and refrigerate for 8 hours or overnight. Keep remaining marinade in the refrigerator for later use.
Preheat oven to 350 degrees F and coat a shallow roasting pan with nonstick cooking spray.
Remove meat from marinade and discard the bag of used sauce. Place ribs and chicken in the prepared pan. Bake for 1 1/2 to 2 hours, brushing the remaining marinade over meats every 20 to 30 minutes.
