Artichoke Chicken Italiano

A mixture of chicken, artichokes and prosciutto, served over pasta, easy-to-make one-skillet dinner that is sure to impress your family and friends.

Ingredients

Serves: 8
  • 1/4 cup olive oil
  • 4 tablespoons butter
  • 1 cup flour
  • Sea salt
  • Fresh ground pepper
  • 4 chicken breast fillets (chopped into bite size pieces)
  • 1 onion, finely chopped
  • 6 to 8 canned artichoke hearts (halved)
  • 4 ounces prosciutto, finely chopped
  • 1 cup chicken stock
  • 3/4 cups white wine
  • 1 pound dry pasta (bowtie, fettucine, angel hair)
  • 2 tablespoons finely chopped fresh basil

Preparation method

Prep: 30 mins |Cook: 45 mins
1. In a skillet over medium heat, combine olive oil and butter and heat until butter is melted. Add chopped onion to skillet and cook until translucent.
 
2. Place flour in large zip lock bag along with salt and pepper to taste. Place chicken in plastic bag and coat with flour mixture.
 
3. Add chicken to skillet and cook until browned. Then add artichokes and prosciutto; continue cooking for 5 minutes.
 
4. Add chicken stock and white wine, cover, reduce heat and let simmer 30 minutes, stirring occasionally. Meanwhile, cook pasta according to directions on package.
 
5. Serve chicken over pasta, with fresh basil sprinkled on top.
