Bring a large pot of water to boil. In a large metal bowl that fits snugly on top of the pot, combine milk, eggs, egg whites, honey, and salt. Beat, then place the bowl right on top of the boiling water.
Continue to whisk the mixture, cooking over the hot water for about 5 minutes. When the mixture reaches 160 degrees F, remove from heat.
Fill an even larger bowl with ice and water. Set the metal bowl with the eggnog inside it into the ice bath and let cool. When mixture is cold, add yogurt and vanilla.
Pour into serving vessel and dust with nutmeg. Serve.
