Wash pork with cold water well. With small knife, make deep slits into the meat. Grind all ingredients with olive oil in a mortar and pestle or use back of spoon if you don't have one (May adjust to taste or size of pork).

With clean finger, stuff slits in roast with mix spices and garlic cloves.

When done rub over roast all over with leftover spices.

Cover roast with a plastic bag and place into a roasting pan. Let sit in refrigerator overnight or up to 1 to 2 days. Don't worry, it won't spoil. The spices keep it fresh.

On the day that you will be cooking the roast, remove from fridge 1 to 2 hrs before cooking so roast can be at room temperature and will cook better.

Roast the pork in a pre-heated 300 degree F oven for 4 to 6 hours, uncovered, in a pan with a rack. Roast the pork skin side down for the first 2 hours and then turn skin side up for the remaining time. Pork should be well done and tender. Make sure all juices run clear before removing from oven.
