Indoor Grilled Marsala Chicken

In a sweet twist on the red wine and olive oil marinade classic, use brandy-fortified Italian marsala wine and nutty sesame oil to flavor chicken breasts before quickly cooking on a contact grill. Inspired by Jim Wenink's "Jim's Marsala Marinade."

Ingredients
Serves: 2
- 2 tablespoons butter, melted
- 1/2 tablespoon chopped garlic
- 1 bay leaf
- 1/3 cup olive oil
- 1/4 cup marsala wine
- 1/2 tablespoon sesame oil
- 1/2 tablespoon soy sauce
- 1/2 teaspoon freshly ground sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon parsley flakes
- 2 chicken breasts
Preparation method
Prep: 10 mins | Cook: 5 mins | Extra time: 30 mins, marinating1.
Combine butter, garlic, bay leaf, olive oil, marsala, sesame oil, soy sauce, salt, pepper, and parsley in a large plastic resealable bag. Add chicken, seal bag, and turn to coat; refrigerate for at least 30 minutes to marinate, then drain.

Preheat indoor dual contact grill to medium.

Grill chicken breasts for 4 to 6 minutes, depending on thickness, or until no longer pink inside.
