Asian-inspired Marinated Prawns

Something I whipped up one night for the in-laws. It was inspired by, and based loosely, on several other recipes I have seen. Fairly basic but terrifically tasty!

Ingredients

3 large cloves of garlic, finely minced
Thumb-size (2 - 2 1/2 inch) ginger, peeled and finely minced
1 green onion, chopped
1/3c. olive oil
juice of 1/2 lemon
juice of 1/2 orange
1 tbsp. dark soy sauce
decent splash of red-hot sauce, to taste
2 lbs. fresh prawns, peeled and de-veined
Bamboo skewers

Preparation method

1. Soak bamboo skewers in cold water during preparation of the marinade.
2. Combine first 8 ingredients in a large, non-reactive, bowl or a large plastic freezer bag.
3. Add prawns and marinate 15 to 30 minutes. Stir or agitate a couple of times to ensure all prawns get completely coated.
4. Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Thread the marinated prawns onto the soaked skewers.
5. Cook prawns on BBQ or grill for 2 to 3 minutes per side, turning once.
