Bring pot of water to boil and add all ingredients. Boil until soft, about 5 minutes. Remove from water with slotted spoon and let cool for a few minutes.

Core out stem of tomato and cut root part off of onion. Place ingredients in blender or food processor and process until you reach desired consistency.

Add salt to taste and place in refrigerator until cool, about 30 minutes. Enjoy.
