Preheat the smoker (or grill with smoker) for 30 minutes with charcoal (if needed) and hickory chips, according to manufacturer’s instructions.

Slice squash into bite-sized pieces. Toss with olive oil in a bowl and add salt and pepper to taste. Pour into smoker basket.

Set basket in smoker, close lid, and smoke for 30 to 45 minutes, until squash is tender. Serve.
