Authentic Irish Soda Bread

This is a recipe direct from my Irish/Welsh ancestors. Keep in mind, sugar and other ingredients were hard to come by before the early 1900's.

Ingredients

4 cups bread flour
1 1/2 teaspoons salt
1 teaspoon baking soda
2 cups buttermilk

Preparation method

1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
2. Mix the flour, salt, and baking soda together. Add in the buttermilk and mix well with a large fork. On a floured surface, knead the dough for one minute. Pat dough down until it is about 1 to 2 inches thick and 7 to 9 inches in diameter. With a knife, cut a large 'X' in the middle. The 'X' should pierce about halfway through the dough. Place dough on baking sheet.
3. Bake in the preheated oven until springy and lightly browned, 45 to 50 minutes. Wrap in a damp towel or paper towels for about 1 hour before serving.
