Mix all marinade ingredients in a small measuring cup. Place elk steaks in a large zip lock bag. Pour marinade over steaks and seal bag. Place bag in a flat casserole dish so the steaks are in a single layer. Refrigerate and marinate at least 4 hours turning occasionally.
When ready to grill, drain marinade and grill on medium heat to desired doneness.
Absolutely delicious. I threw elk medallions in the marinade before work this morning, and let them rest this evening before throwing them on the grill. Served with some gremolata asparagus, the meal changed my life.
This is an extremely easy yet VERY flavorful marinade. I made it last minute when we were cooking up our first elk steaks for friends. Everyone could not get over how the perfect the flavor was and how it was not too much (didn't overpower the fresh taste of the elk).
