Make the salsa a day ahead and allow to sit. Combine the diced peach, tomatoes, pepper, cilantro and onion together in a food processor and pulse until chunky. Place in a bowl and put in the fridge.

Next place garlic in a 350 degree Fahrenheit oven and roast for 10 minutes until soft, set aside. Cut potatoes and place them in a pot of hot water and allow to cook until they are fork tender, about 20 minutes.

Season pork with salt and pepper and place into a preheated skillet. Sear on all sides and place in the oven. Allow to cook to a medium or longer if you prefer.

Take pork out of the oven and allow to rest, about 2 to 3 minutes. Drain potatoes and season with salt and pepper, add a little butter and milk if you desire, and add the roasted garlic. Continue to mash until you are happy. Plate the pork and the potatoes and spoon some of the salsa on the pork and enjoy.

You can start everything at the same time so everything come out together.
