Preheat oven to 350 degrees F.

Heat the oil in an oven-safe Dutch oven over medium heat. Sear the pork until golden brown on all sides. Pour in beer, and bring to a boil.

Cover the Dutch oven, and place into the preheated oven. Cook until the meat is very tender, about 2 hours.

Cook the onions in a skillet with a little oil over medium heat until they turn dark, golden brown, about 15 minutes. Stir frequently as the onions cook. Set aside once done.

Shred the pork using two forks, discarding excess fat and any bone or gristle. Mix in the browned onions, and season to taste with salt and pepper.
6.
Serve over burger buns and condiments such as ketchup, mustard, or BBQ sauce.
