Ingredients
Serves: 8
1 cupmayonnaise
2chipotles in adobo sauce
1 tbsptablespoon adobo sauce
1/2lime, juice
Salt and freshly ground black pepper
2avocado's
1 tbspfresh lime juice
1/2 tsppepper
1/2 tspsalt
8large eggs
8slices Pepper jack cheese
1 lbGround chuck or ground sirloin (your choice in beef)
In a food processor blend mayo, chipotle peppers, adobo sauce, lime juice, and salt and pepper to taste till smooth.

Mash avocado's with lime juice, salt and pepper.

Fry the eggs over medium.

With you meat grinder, grind bacon and chuck 2 times. Mix throughly together with salt, pepper, onion and garlic powder and form patties. Grill till done and top with cheese just before done to melt cheese.

Serve hot on a bun topped with avocado mash, fried egg. Spread chipotle mayo on top bun and enjoy!
I don't own a meat grinder, hell, I don't even own a food processor. I have made a similar(kind-of) burger a while back when I had a craving for a bacon cheeseburger but all I had for ground beef was extra-lean. We all know that no fat equals no flavor. My solution at the time was to fry the bacon and then add the drippings to the ground beef before making patties. It actually worked out pretty good for me. Maybe I'll try this if I come across a meat grinder.
