Boil cubed potatoes in a large pot until just tender, about 20 minutes. Strain and allow to air dry for a few minutes.

Preheat smoker while the potatoes are cooking.

Line a large mixing bowl with aluminum foil to make a liquid-tight foil bowl. Place the potatoes into the bowl and drizzle with Italian dressing, melted butter, garlic salt, and minced garlic. Fold the edges of the foil over the potatoes to make a tight ball.

Smoke using wood of your choice for 2 hours.
Tip
If you can find one, use a disposable aluminum pan instead of making your own foil bowl. Cover the pan tightly with aluminum foil to seal.
