Combine all the ingredients, except for the habaneros, in a saucepan and bring to a boil. Boil for 10 minutes until the carrots are soft.

Place all the ingredients including the habaneros in a blender or food processor, and puree until smooth. Strain for a smoother sauce.

Put mixture back into the pot and simmer for an additional 5 to 10 minutes to help combine flavors.

Pour in sterilized jars and refrigerate (or process in a water bath).
