Family-Pleasing Venison Swiss Steaks

Being a hunter and having a family that doesn't care for game, I've had to become creative with my cooking to make everyone happy. Everyone really likes this recipe, even my wife and daughter. This oven baked steak makes it's own gravy and is best served with mashed or boiled potatoes. It will stick to your ribs and keep you warm on a cold day!

Ingredients
Serves: 4
- 4 (6 ounce) trimmed venison steaks
- salt and pepper to taste
- 2 cups flour
- 1/2 onion, cut into 1/4-inch slices
- 1 tablespoon vegetable oil
Preparation method
Prep: 10 mins | Cook: 3 hours 10 mins1.
Preheat oven to 300 degrees F.

Beat the venison steaks with your favorite meat tenderizing implement to make 'em good and tender.

Season the venison steaks to taste with salt and pepper. Press into the flour to completely coat, then shake off excess flour. Reserve 1/4 cup of flour.

Heat the oil in an ovenproof skillet over medium-high heat. Cook the floured venison steaks in the hot oil until golden brown on each side, about 4 minutes per side. Pour in enough water to cover the steaks, add the onion slices, and sprinkle with 1/4 cup of flour.

Cover, and bake in the oven until the steaks are very tender, about 3 hours. Enjoy!
