Combine the marinade ingredients in a zip-top plastic bag. Using a sharp knife, lightly score meat on each side in a diamond pattern, and place into the bag with the marinade. Press out excess air and seal. Marinate in the refrigerator 2 days.
Remove from the refrigerator 2 hours prior to cooking.
Preheat grill for high heat. Discard marinade and pat meat dry with a paper towel.
Cook on the preheated grill to your desired degree of doneness, 4 to 5 minutes per side for medium-rare. Let meat rest 10 minutes before slicing.
